Bharwa Lauki /Labu Botol Sumbat ialah hidangan sampingan pedas masakan Rajasthani yang unik. Hidangan ini mempunyai gabungan rasa dan rasa yang sempurna dan ia juga merupakan hidangan yang sihat. Ini mempunyai rasa labu botol yang enak dan juga hidangan yang sempurna untuk makan malam malam minggu. Hidangan ini biasanya dihidangkan dengan mana-mana roti India. For The Stuffed Lauki

1 BigBottle Gourd (Doodhi / Lauki)

1/2 CupCrumbled Paneer (Cottage Cheese)

1/4 CupFinely Chopped Mixed Nuts (Almonds , Cashews And Pistachios)

1/4 CupFinely Chopped Onions

1 TspGinger-Green Chili Paste

2 TbspFinely Chopped Coriander (Dhania)

1/2 TspDried Mango Powder (Amchur)

1/2 TspCoriander (Dhania) Powder

1/2 TspChili Powder

1 TspCornflour

SaltTo Taste

For The Tomato Gravy

2 Cups Roughly Chopped Tomatoes

1 Tbsp Oil

1 Small Stick Cinnamon (Dalchini)

3 Cloves (Laung / Lavang)

1/2 Tsp Ginger-Green Chili Paste

1 Tsp Coriander-Cumin Seeds (Dhania-Jeera) Powder

1 Tsp Chili Powder

1/2 Tsp Garam Masala

1 Ts pSugar

Salt To Taste

For The Garnish

2 TbspFinely Chopped Coriander (Dhania


For the Stuffed Lauki

  • Step1In a deep bowl, add paneer, mixed nuts, chopped onions, ginger-green chili paste, chopped coriander, dried mango powder, coriander, chili powder, salt, cornflour and mix it well and keep the stuffing aside.
  • Step2Cut the bottle gourd lengthwise to get two halves and scoop out the center of both the halves.
  • Step3Cut each half into a 50 mm. (2?) long pieces and you will get approx. 10 pieces in all.
  • Step4Combine the bottle gourd pieces, salt and enough water in a deep non-stick pan and mix it well.
  • Step5Cover with a lid and cook on a medium flame for 4 to 5 minutes or till the bottle gourd pieces are cooked.
  • Step6Drain the water from it and keep aside to cool slightly
  • Step7Divide the stuffing into 10 equal portions and stuff each piece of bottle gourd with a portion of the filling and keep it aside.

For the Tomato Gravy

  • Step1Combine the tomatoes and 1 cup of water in a deep non-stick pan, mix it well and cook on a medium flame for 5 to 7 minutes.
  • Step2Allow it to cool slightly and blend in a mixer till smooth and keep it aside.
  • Step3Heat the oil in a non-stick kadhai, add the cinnamon and cloves and fry on a medium flame for a few seconds.
  • Step4Add the tomato mixture, ginger-green chili paste, coriander-cumin seeds powder, chili powder, garam masala, sugar and salt, mix it well and cook on a medium flame for 2 to 3 minutes and stir occasionally and keep it aside.

How to Proceed

  • Step1Just before serving, place the stuffed bottle gourd pieces on a serving plate and pour the hot tomato gravy over it.
  • Step2Garnish with coriander leaves and serve it with paratha or roti.


  • Step1If you want, you can fry the stuffed bottle gourd in hot and then add to the gravy and be careful while frying.
